Hearty Herb Chicken Soup
1 tablespoon oil
1 medium onion, chopped
1 pound boneless skinless chicken breasts, cut into 1/2 inch cubes
1 tablespoon flour
2 19 ounce cans white kidney beans, drained
2 13 3/4 ounce cans chicken broth
1 envelope Good Seasons Garlic and Herb Salad Dressing Mix
Suggested garnishes: chopped cilantro, sliced green onions, diced tomatoes, garlic croutons
Heat oil in 6 quart saucepot on medium high heat.
Add onion and chicken; cook and stir until chicken is cooked through, about 8 minutes. Stir in flour.
Add beans, broth and salad dressing mix. Bring to boil. Reduce heat to low; cover and simmer 20 minutes.
Top with cilantro, green onions, tomatoes and croutons, if desired.
