Chocolate Marshmallow Peeps
Easter will be here before we know it and so will spring! For many people especially in the north, they can’t wait for that to happen. This is perhaps the worst winter for many that they can remember in years. I always look forward to Easter because usually it means the daffodils are starting to bloom and the grass starts turning green. Now that I live in Florida it is a totally different picture. To me here it feels like summer already! I have enjoyed the winter months here so much and love everything about it.
I had the best time making these the other day. I found a silicone mold at Target for the Peeps and went to work making my own peeps out of Vanilla Bean Marshmallows. The recipe I used is over at Recipes, Food and Cooking. The only difference is I added the pulp of a vanilla bean to the marshmallows.
There are a couple of tricks to making these. One, spray the silicone mold lightly with cooking spray. Two you must use a piping bag to fill the molds. Spooning the marshmallows in will not work. I tried a couple to see what would happen and let’s just say they had some missing parts, like a head for one. You need the pressure from the piping bag to fill all of the nooks and crannies. I used a 16 inch piping bag and if you have larger it would work also. I had to refill it once and that was pretty messy. Let the marshmallows set overnight before releasing from the mold. I also put a light coating of confectioner’s sugar on the bottom of the peeps using a sifter to keep them from sticking when they were removed from the molds. You can get about 24 peeps from one batch of marshmallows if you have 2 pans. Otherwise do what I did and pour the remaining marshmallows into a pan and cut into squares, I topped them with pink, purple and white sprinkles.
I used a 12 oz. bag of chocolate chips with 3 tablespoons of oil in it for the chocolate mixture. I also refrigerated them for a hour to set the chocolate.

Ingredients
- 1 batch of marshmallows
- 12 oz. chocolate chips
- 3 tablespoons vegetable oil
Instructions
- Melt the chocolate chips with the oil in the microwave, about 1 minute 30 seconds. Do it in 30 second intervals, stirring well before adding additional time.
- Stick the peeps on a stick and dip in chocolate one at a time. Place on parchment paper on a cookie sheet to harden. Refrigerate 1 hour or until hardened.
