Cranberry Oatmeal Cookies

  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon each ground ginger, cinnamon and nutmeg
  • 1/2 cup butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups quick cooking oats
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • Cinnamon Sugar: Mix 2 tablespoons granulated sugar with 1/4 teaspoon cinnamon


  1. Heat oven to 350 degrees. Line cookies with parchment paper.
  2. Mix flour, baking soda, salt, and spices. Beat butter and sugars in mixing bowl and beat until fluffy. Beat in egg and vanilla. Gradually add the dry ingredients, including oats and cranberries and walnuts.
  3. Drop by rounded teaspoonfuls on prepared sheets. Dip fork into cinnamon sugar mix and press cookies to flatten.
  4. Sprinkle with a little more of this mix, and bake 8-10 minutes or until lightly golden. Do not over bake!
  5. Remove to rack to cool. Keeps in airtight container very well. Recipe doubles easily.
