Cranberry Pecan Cups
Cookie dough cups filled with cranberries and pecans.
Ingredients
- 1 (3 oz) pkg cream cheese
- 1/2 cup butter
- 1 cup flour
- 1 egg
- 3/4 cup brown sugar
- 1 teaspoon vanilla
- 2/3 cup finely chopped fresh cranberries
- 6 Tablespoons chopped pecans
Instructions
- Blend cheese and butter. Stir in flour. Chill one hour.
- Shape into 24 balls
- Place in ungreased 1 3/4" muffin pans. Press dough evenly against bottom and sides of each.
- Beat together egg, sugar, vanilla, and dash of salt just till smooth. Stir in cranberries and pecans. Spoon into pastry lined muffin cups.
- Bake 325° 30-35 minutes. Cool in pans.
