Chicken Thighs Cacciatore

8 chicken thighs, about 2 pounds, skin removed

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1 small red onion, diced

4 cloves garlic, minced

1 red pepper, cut in strips

1 green pepper, cut in strips

1 10 oz pkg. mushrooms, cut in quarters

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 teaspoon dried oregano

1 28 oz can whole plum tomatoes, drained and roughly chopped

1 bay leaf

Sprinkle chicken with salt and pepper.

Heat oil in Dutch oven or deep skillet over medium high. Add chicken and brown about 4 minutes on each side.

Add onion, garlic, red pepper, green pepper, mushrooms, thyme, rosemary and oregano to pan. Cook 5 minutes, stirring.

Add tomatoes and bay leaf.

Simmer 35 minutes, or until chicken is cooked through
