Cornmeal Pizza Dough
Yeast Mixture:
1 package active dry yeast
1/4 cup tepid water (under 110ºF)
1/8 teaspoon sugar
Additions:
1 tablespoon nonfat dry milk
1/4 cup water
Dry Ingredients:
1 cup flour
1/3 cup cornmeal
1/4 teaspoon salt
Mix yeast mixture and proof for a few minutes until bubbly.
Whisk dry milk and 1/4 cup water into yeast mixture.
Stir in dry ingredients.
Mix, knead, let rise until doubled. Pat down and fold in thirds, let rise again until more than doubled.
Gently shape.
