Italian Meat Roll

2 eggs, beaten

3/4 cup soft bread crumbs

1/2 cup tomato juice

1/2 tsp. oregano

1/4 tsp. salt

1/4 tsp. pepper

1 small clove garlic, minced

3 Tblsp. snipped parsley

2 lbs. lean ground beef

8 thin slices boiled ham

1 1/2 cups shredded mozzarella cheese

3 square slices mozzarella cheese, halved diagonally

Combine first 8 ingredients & then stir into ground beef, mixing well.

On foil, pat meat to a 10 x 12 inch rectangle. Arrange ham slices on top of meat, leaving a beef margin around edges. Sprinkle shredded cheese over ham.

Starting with short end, carefully roll up meat, using foil to lift. Seal edges and ends well. Place roll seam side down in a 9 x 13 inch pan.

Bake 1 hour, or until meat is no longer pink in center of roll, then place cheese wedges over top of roll. Return to oven for 10 minutes or until cheese melts.

Serves 5 to 6
