 Italian Sausage Calzones

1/2 pound bulk Italian sausage

1/4 cup fine chopped onion

1/4 cup fine diced mushrooms

1/3 cup pizza sauce

Quick Calzone Dough (below)

1 cup shredded mozzarella cheese

1/4 cup grated parmesan cheese

Heat oven to 450ºF. Cook sausage in skillet until browned, then drain. Stir in onion, mushroom and pizza sauce; keep warm. Prepare dough. Layer mozzarella cheese, sausage mixture and parmesan on half of circle to within 1″ of edge. Brush edge of dough lightly with water. Fold dough over filling; press edge with fork to seal. Brush with egg white.

Bake about 15 minutes or till golden brown. Cool for 5 minutes. Cut into wedges.

DOUGH: 2 c. Bisquick, 1/3 c. hot water (120-130ºF), 1 tbl oil. Mix all until dough forms. Place dough on surface dusted with Bisquick; roll in Bisquick to coat. Knead dough 15-20 times or until smooth and elastic. Roll into 12″ circle. Place on ungreased cookie sheet.
