Italian Skillet
1/2 pound Italian sausage
1/2 pound hamburger
1 green pepper (cut in strips)
1/2 pound mushrooms (cut in halves)
3 to 6 ounces macaroni shells
4 zucchini (in 1/2 inch slices) (briefly cooked)
1 large onion, sliced
2 cloves garlic, smashed
2 small cans tomato sauce
oregano, salt and pepper to taste
12 ounces grated mozzarella cheese
Cook macaroni in water until done, but firm. Set aside.
Remove sausage from casing and brown in skillet with hamburger. Remove excess oil. Add onion, pepper and garlic to meat mixture. Cook briefly until softened.
Add cooked zucchini (shouldn’t be mushy). Add mushrooms and tomato sauce. Season to taste. Top with Mozzarella cheese, cover and cook over low to medium heat until cheese melts.
