Light Stuffed Pasta Shells
1 cup lean ground turkey, browned
1 cup chopped, steamed broccoli
1 cup skim ricotta cheese
2 garlic cloves (crushed)
2 Tbsp fresh oregano
2 Tbsp fresh Italian parsley
2/3 pound jumbo shells, cooked
2 cups marinara sauce
1 cup reduced-fat mozzarella cheese, grated
Toss together turkey, broccoli, ricotta, garlic, oregano, and parsley. Stuff mixture into cooked shells.
Pack shells tightly into a baking dish.
Cover with sauce and grated cheese. Cover with foil.
Bake at 350° for 1 hour. Remove foil last 15 minutes to brown.
Serves 6-8 people
