Pepperoni Ring

Pepperoni Ring

1 1/2 cake yeast
5 cups flour — (5 to 6)
2/3 cup milk
1/3 cup water
2 tablespoons yogurt
1 teaspoon sugar
1/2 pound butter
1 tablespoon salt
1 teaspoon oregano
1/4 pound pepperoni sausage, diced
1/2 cup grated cheddar cheese
1/2 cup grated parmesan cheese
1 egg
1 egg yolk

Melt butter. Cool. Warm milk water and sugar Dissolve yeast in milk, add butter. Beat egg add to yeast mixture. Beat. Add 3 1/2 cups flour, salt and oregano and knead in Kitchen Aid bowl.

Knead 10 minutes adding flour as needed until dough is smooth and satiny. Transfer dough to a greased bowl and turn it to coat with the oil. Cover with plastic and let rise in a warm place 40 to 50 minutes.

Roll out dough or open with hands into a rectangle, on a slightly floured surface. Sprinkle with the cheeses and the diced pepperoni. Roll jellyroll fashion and then shape it into a ring, pinching ends together. ( On a greased cookie sheet)

Let rise 50 minutes. Baste with egg yolk and sprinkle parmesan on top.

Bake in a pre heated 400ºF oven in the upper rack for 30 to 35 minutes.
