Sweet Risotto
2 Tbsp butter
2 cups Aborino rice
3 cups boiling water
1/4 tsp salt
3 cups hot milk
3/4 cup sugar
1/3 tsp cinnamon
1/2 cup golden raisins
2 cups sliced strawberries
1 cup blueberries
1-1/2 warm cream
In a large saucepan, melt butter over medium heat. Add rice to butter and stir until well coated. Add boiling water and salt. Cook, stirring until water is absorbed, 5-6 minutes.
Add 1 cup hot milk and reduce heat to low. Cook, stirring until milk is absorbed, about 2 minutes. Repeat twice until all milk is used and rice is creamy and tender, but still firm in center.
Stir in sugar, cinnamon and golden raisins.
In a small serving bowl, combine strawberries and blueberries.
Serve warm pudding with berries and warm cream.
