Pineapple French Toast

Upside-Down Pineapple French Toast

2 Tablespoons margarine

2 Tablespoons brown sugar

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

6 canned pineapple rings

6 thick slices of French bread

2 eggs

1/2 cup milk

1/2 teaspoon vanilla

Preheat oven to 400 degrees. Spray 13 x 9 baking dish with non-stick cooking spray.

In small pan, melt margarine. Stir in brown sugar, cinnamon, and nutmeg. Spread evenly on bottom of baking dish.

Arrange pineapple rings on top of brown sugar mixture. Arrange pineapple rings on top of brown sugar mixture. Place 1 slice of bread on top of each pineapple ring as daintily as Martha Stewart would. Then combine eggs, milk, and vanilla until well-blended. Pour over bread.

Bake 30 to 35 minutes.

To serve, cut and with spatula, turn onto plate so pineapple rings are up.
