Sausage Burrito

8 eggs
8 tortillas
1/2 cup shredded cheese
1/2 pound sausage
1/2 cup mushrooms, sauteed (optional)

Cook sausage, pour off fat. Combine eggs into sausage and cook until soft. Sprinkle in cheese.

Place portion onto tortilla, fold once, fold each end and roll. Serve with salsa or picante sauce.

Makes 3 or 4 servings.

May also use sauteed green peppers or chopped ham or crumbled bacon instead of sausage.
