Scotch Eggs

1 lb. bulk pork sausage
1 T. fresh parsley, chopped
1 T. grated onion
1/4 tsp. ground cinnamon
1/8 tsp. ground nutmeg
4 hard-cooked eggs, shelled
1/2 cup fine Italian bread crumbs

Combine sausage, parsley, onion, cinnamon and nutmeg; mix well. Divide sausage mixture into 4 portions; shape into patties. Place 1 egg on top of each patty, shaping sausage mixture around egg until completely covered. Roll each sausage-covered egg in bread crumbs. Bake in preheated 350 degree oven for 15 to 20 minutes, until golden brown. Makes 4 servings.
