Spinach Pie
2 packages frozen spinach
1 small onion, minced
1/2 teaspoon salt
3 tablespoons butter
12 ounces cottage or ricotta cheese
1/2 cup Parmesan cheese
1/2 cup milk
3 eggs, beaten
1 unbaked pie shell, 9″
Cook and drain spinach. Saute onion and spices in butter. Combine cheeses, milk and eggs in bowl, mix well. Add spinach and onion to mixture, then spoon into pie shell.
Bake at 350ºF for 40-50 minutes.
