Stuffed French Toast

Stuffed French Toast

3 bananas, mashed

1/3 cup brown sugar

1 cup chopped pecans

1/2 cup craisins* or golden raisins

1/2 tsp cinnamon

1 loaf French bread

*dried sweetened cranberries


4 eggs

1/2 cup skim milk

1/2 tsp vanilla

In a medium bowl, mix together bananas, brown sugar, pecans, craisins and cinnamon.

Use whole loaf of French bread, cut 1-1/2″ thick slices.

Cut pocket lengthwise through crust of each slice, make sure not to cut all the way through slice.

Spread 2 Tbp fruit mixture in middle of each bread slice.

Set aside when all slices are filled.

In medium bowl, whisk together eggs, milk and vanilla.

Dip each slice of stuffed bread in batter.

Place into a buttered skillet over medium heat until lightly browned on each side.

Dust with powdered sugar or cinnamon sugar. Maple syrup is also a nice condiment.

Serve immediately.
