Feather Rolls
4 -1/2 Cups bread flour
1 Package dry yeast
1-1/2 cups warm water (120 degrees)
1/2 Cup cooked mashed potatoes
1/3 Cup butter, melted
1/4 Cup sugar
1-1/4 Teaspoon salt
2 Tablespoons butter, melted
Poke a hole in potato and put in microwave until cooked
Place water and yeast in bread machine. Add flour slightly cooled mashed potato,1/3 cup butter, 1/4 cup sugar and 1-1/4 teaspoons salt.
Follow manufacturers directions for dough in bread machine.
After dough is finished, turn dough out onto a lightly floured surface.
Knead dough for 3-5 minutes. Place dough in a greased bowl, turning once to grease the surface. Cover and chill for at least 2 hours or up to 24 hours.
Turn dough onto a lightly floured surface and punch down. Let rest for 10 minutes. Meanwhile, grease a 13X9X2 baking pan. With lightly floured hands shape dough into 15 rolls. Cover and let rise approximately 40 minutes or until nearly double in size.
Bake rolls in a pre-heated 400 degrees oven for approximately 25 minutes. When browned removed from oven and brush tops with melted butter. Serve warm.
