Mediterranean Turkey Burgers

1 Pound ground turkey
1/2 Cup butter cracker crumbs
1 10-Ounce Package frozen chopped spinach, thawed and well drained
1/3 Cup onion, chopped
1/4 Teaspoon salt
1/3 Cup Dijon mustard, divided
1/4 Cup roasted sweet red peppers, sliced
4 Ounces fresh Mozzarella cheese, drained, cut into 1-ounce slices
4 Kaiser rolls, toasted

In a large bowl, thoroughly combine turkey, cracker crumbs, well drained spinach, onion, salt and 1/4 cup mustard. Shape into four patties. Cover and chill 30 minutes.

Grill burgers over medium-low heat for 8 to 10 minutes on each side or until cooked through to an internal temperature of 165 degrees F.

Top each burger with 1-1/2 teaspoons mustard, 1 tablespoon red pepper and 1 ounce cheese.

Cover grill and cook until cheese melts.

Serve on toasted Kaiser rolls.
