Kentucky Baked Beans
2 c. dry Great Northern beans
5 c. water
3 or 4 Tbsp. bacon grease
1 c. brown sugar
3/4 c. catsup
1 onion, quartered
1/4 lb. bacon strips, cut in half
Boil beans in water and bacon grease until done (skin shrivels and comes off when a test sample of 1 or 2 beans are cooled rapidly, blow on them). Add brown sugar, catsup, onion and bacon strips and place in roasting pan or bean pot.
Cover and cook at 250° F. for 9 hours total. After 4 hours of cooking, they must be stirred and once each hour after until done.
Water may be added if they get too dry.
