Pan-Fried Cornbread

2 C. self-rising corn meal

2 to 3 C. very hot water

1 to 2 T. oil for pan

Mix corn meal and hot water. Heat oil in skillet.

Drop corn meal mixture onto hot oiled skillet by the heaping teaspoonful, like little pancakes.

Cook like you would a pancake, browning on both sides.
