Country Boy Pepper Steak
1 1/2 lbs. ground beef
1 t. seasoned salt
1 egg beaten
3/4 C. bread crumbs
2 T. oil
1/2 C. onion finely chopped
1/2 large green pepper finely chopped
1 small jar (2 oz.) pimento finely chopped
flour
Saute the onion and green pepper in the oil until tender. Do not brown. Drain and cool. Add the pimento to the mixture.
In a mixing bowl, add the beef, sauteed vegetables, salt, egg and bread crumbs. Mix together well and shape into 6 patties.
Coat the patties with flour. Saute them in a skillet for about 4 minutes on each side. Remove the patties from the pan. Leave 3 T. fat in the pan and add 2 T. flour. Stir in and cook until it turns light brown. Add 2 cups water and stir while it thickens. Return the meat patties back to the pan. Simmer for 15 minutes.
