Pork Chop Casserole with Tomatoes
3/4 cup uncooked rice
6 pork chops, about 1/2 inch thick
1 large onion, sliced into rings
1 medium green pepper, sliced into rings
1 can (14.5 ounces) tomatoes
1/4 teaspoon thyme
1/4 teaspoon marjoram
1 teaspoon salt
dash pepper
1 1/2 cups beef broth
Put rice in bottom of a lightly greased 2-quart casserole. Brown pork chops. Place chops on rice.
On chops layer sliced onion, green pepper, tomatoes, then sprinkle with seasonings and pour beef broth over all.
Cover and bake at 350° F. for 60 to 70 minutes, until chops are tender and rice is done.
