Beef and Vegi Stir Fry

1 lb. tenderized round steak – partially frozen

1 tomato

1 bell pepper

1 onion

1 carrot

1 lemon

1/2 C. broccoli pieces

1/2 C. cauliflower pieces

1/4 t. cayenne pepper

1/4 t. ground ginger

3 T. soy sauce

3 T. olive oil

salt and pepper

Cut partially frozen round steak into 1/4 inch strips and marinate in the refrigerator for 10 minutes in soy sauce, ginger, cayenne pepper, salt and pepper.

While beef strips are marinating, julienne vegetables.

Place half of the oil in a wok or large skillet and allow to get very hot. (400 to 425 degrees) Place vegetables (except tomato and lemon) in the hot skillet and stir fry for 2 – 3 minutes. Remove from skillet and set aside.

Add remaining oil to skillet and reheat. Stir fry marinated beef until brown. Do not overcook. Add cooked vegetables and tomato to beef. Salt and pepper to taste. Squeeze a lemon over mixture.

This recipe takes about 15 minutes to prepare and will serve 4. Beef and Vegi Stir Fry is pleasing to the eye, nutritious and tasty.
