Chipotle Chicken
2 C. chopped cooked chicken
2 T. slivered almonds
2 T. raisins
2 T. sliced black olives
1 15 oz. can tomato sauce
1 large clove garlic, minced
1 1/2 T. brown sugar, packed
1/4 C. vinegar
1 t. paprika
1 t. vegetable oil
1/2 t. salt
1/4 t. liquid smoke
1/8 t. crushed red pepper, or to taste
1 dozen corn tortillas
1 1/2 C. shredded cheddar cheese
In medium bowl, combine chicken, almonds, raisins and olives.
In another bowl blend tomato sauce, garlic, brown sugar, vinegar, paprika, oil, salt, liquid smoke and red pepper.
In a 1 1/2 quart greased casserole, alternate layers of tortillas, chicken, sauce and cheese, finishing with cheese. Bake at 375°F. for 30 to 35 minutes.
Makes 8 servings.
