Wine Baked Chicken

8 boneless chicken breasts, skinned

1 pound fresh mushrooms, halved

1 cup dry white wine

1/3 cup chopped fresh parsley

2 tablespoons fresh tarragon, minced (or 1-1/2 teaspoons dried

1/2 teaspoon salt

1/2 teaspoon pepper

Arrange chicken breasts in 13×9-inch baking dish. Place mushrooms around chicken, pour wine over everything and sprinkle with parsley, tarragon, salt and pepper.

Cover and bake in preheated 350-degree oven for 50 to 60 minutes or until fork-tender and chicken juices run clear.
