Chocolate Sandwich Cookies
2 18 1/4-ounce packages devil’s food cake mix
4 eggs
2/3 cup vegetable oil
8-ounce package cream cheese, softened
1/2 cup butter
3-4 cups powdered sugar
1/2 teaspoon vanilla extract
In a mixing bowl, beat cake mixes, eggs and oil. Batter will be very stiff. Roll into 1 inch balls; place on ungreased baking sheets and flatten slightly.
Bake at 350 degrees for 8-10 minutes. Cool.
In another mixing bowl, beat cream cheese and butter. Add powdered sugar and vanilla; mix until smooth.
Spread bottom of half of the cookies with the cream cheese mixture. Top with remaining cookies. Store cookies in the refrigerator.
Yield: 4 dozen.
