Green Bean, Potato and Tomato Medley

1 lb. small red new potatoes scrubbed and cut in 1/2

3 teaspoon salt

1 lb. green beans, trimmed

1 tablespoon olive oil

1 medium onion, chopped

2 tomato, seeded and chopped

1 tablespoon tomato paste

1/4 teaspoon pepper

Cook potatoes until almost tender. Add beans; cook 6 to 7 minutes, until tender. Drain.

Heat oil over medium-high heat. Add onion; cook 3 minutes, until softened. Add tomato; cook 3 minutes; Stir in tomato paste; cook 1 minute. Add remaining 1 tsp. salt and the pepper.

Mix potatoes and beans with onion mixture.
