Portabella Stuffed with Potato

Bake 4 baking potatoes following the recipe for Stuffed Potatoes. (omitting ham, in this section)

Fry 4 pieces bacon and set aside.

Have ready 6 large portabella mushrooms. Take the stems off. Instead of using the potato shell, mound the potato mixture on the inside of the mushroom cap.

Top with Cheddar Cheese and fried crumpled bacon. Bake at 350°F. for 25 minutes.
