Potato Pie

1 pie crust

2 cups water

3 tablespoon butter

1/2 teaspoon salt

1/2 teaspoon garlic powder

1/8 teaspoon pepper

2-1/2 cups mashed potato flakes

1/2 cup sour cream

1/4 cup bacon bits or 4 slices cooked and crumbled

1/2 cup thin sliced green onion

1 cup cheddar cheese, shredded

2 small tomatoes, thinly sliced

1 tablespoon oil

Bake pie shell 450° till golden, 9-10 minutes. Cool.

Prepare potatoes by putting water, butter, salt, garlic powder and pepper in saucepan. Bring to boil. Remove and stir in potatoes, sour cream and bacon.

Sprinkle onion over pie shell. Sprinkle with cheese. Spoon and spread potato mixture over cheese.

Arrange tomatoes around edge, overlapping. Brush tomatoes and potato mixture with oil.

Bake 400° F. 15-20 minutes till thoroughly heated.

Cool 5 minutes before serving.

Garnish with 2 tablespoon onion. Cut into wedges; top each serving with 1 tablespoon sour cream.
