Potatoes Ranchero
1/4 cup margarine
1/4 cup flour
2 cups milk
1 teaspoon salt
1/4 teaspoon pepper
3/4 cup chopped green onions
1 8-oz. wedge sharp Cheddar cheese shredded
6 cups sliced cooked potatoes
1 green bell pepper cut in rings
1/2 cup barbecue sauce
Make cream sauce with margarine, flour, milk and seasonings. Add onions and cheese. Stir until cheese is melted.
Alternate layers of potatoes and cheese sauce in 12×8 baking dish. Top with bell pepper rings and barbecue sauce .
Bake 350° F. 25-30 minutes.
