Spinach and Potato Casserole
7-8 large potatoes, peeled, cooked and mashed
1-8-ounce carton sour cream
1 cup shredded Cheddar cheese
2 tablespoons chopped chives
1-10-ounce package frozen spinach thawed and drained
2 teaspoons salt
1/4 teaspoon pepper
1/4 cup butter or margarine
In a large bowl, combine all ingredients except cheese.
Spoon into a greased 2-quart casserole dish, sprinkle cheese on top.
Bake uncovered, at 400° F. for 15-20 minutes.
Serves 6-8
