Sweet Potato Souffle

Sweet Potato Soufflé

2 cups sweet potatoes – cooked and mashed

1-1/2 cups sugar

2 eggs

3/4 stick margarine or butter

1 cup milk

1/2 teaspoon nutmeg

1/2 teaspoon cinnamon

Mix and bake at 400° for 20 minutes

Remove from oven and add this already prepared topping:

3/4 cup corn flake crumbs

1/2 cup chopped pecans

1/2 cup brown sugar

3/4 stick margarine

Mix and put on top of souffle and put back in oven for 10 minutes.
