Savory Vegetable Rice Pilaf

2 1/2 C. water

1 1/3 C. brown rice

1/2 t. salt

2 T. olive oil

1 1/2 C. carrots julienned

1 1/2 C. onions julienned

1 1/2 C. celery thinly sliced

2 t. garlic minced

2 t. savory

2 t. basil

1 t. cumin

1/4 t. fresh black pepper

Bring water to a boil in a saucepan. Add the salt and rice. Cook, covered for 1/2 hour.

Heat the oil in a large skillet. Saute the carrots, onion, celery and garlic together for about 4 minutes, add the spices. Stir into the rice at the end of the rice’s cooking time.

Pour into a casserole dish and bake at 350°F. for another 1/2 hour or until rice is tender.
