Vera Cruz Tomatoes

3 slices bacon

1/4 cup chopped onion

8 oz. fresh spinach chopped

1/2 cup sour cream

dash bottled hot pepper sauce

4 medium tomatoes

1/2 cup shredded mozzarella cheese

Cook bacon till crisp, reserving 2 tablespoons drippings. Crumble bacon; set aside.

Cook onion in drippings till tender; stir in spinach. Cook, covered, till tender, 3-5 minutes.

Remove from heat; stir in sour cream, bacon, and pepper sauce.

Cut tops from tomatoes; remove centers. Drain.

Salt shells; place in 8 x 8 x 2″ pan.

Fill with spinach mixture.

Bake 375° F. 20-25 minutes.

Top with cheese; bake till cheese melts, 2-3 minutes.
