Yam and Apple Casserole

4 large yams

3 large tart cooking apples

2 cups warm apple juice

2 tablespoons butter

2 tablespoons cornstarch

1 cup sugar

2 teaspoon lemon juice

Parboil the yams, pare and slice.

Peel and slice the apples.

Mix together the cornstarch, sugar and apple juice.

Add lemon juice and butter.

Alternate layers of sliced apples and yams in a buttered casserole.

Pour the sauce over.

Bake 1 1/2 hours at 325° F.
