Zucchini Cheese Layers
3 medium zucchini, sliced
1/4 cup onion, chopped
1 lb. cottage cheese
1 tablespoon lemon juice
1 teaspoon basil
1/4 cup parmesan cheese, grated
Sauté zucchini and onion. Whip cottage cheese, lemon juice and basil in blender.
Alternate layers of zucchini and cottage cheese mixture in a casserole dish. Top with parmesan cheese. Bake uncovered at 350º for 25 minutes. Serve hot.
