Clam Patties

Clam Patties in Shells
This recipe makes a lot of patties, great for a large group

24 raw clams, reserve juice

6 small onions, chopped

24 hard boiled eggs, chopped

1 large celery, finely chopped

2 cup milk

2 quarts bread crumbs

parsley flakes


salt and pepper to taste

Put clams through food chopper. Cook clams in a small amount of butter in frying pan, cook about 20 minutes. Add reserved juice and onions while cooking.

Remove from heat and cool. Add eggs, celery and remaining ingredients except paprika, mix well.

Put mixture into cleaned clam shells, and put paprika on top, or made into patties and fry in hot oil.
