Cod Stew
2-3 fillets of cod
2 lbs potatoes, peeled & sliced
4 carrots, peeled & cut
2 medium onions, chopped
4 tomatoes, sliced
salt and pepper
1/4 cup margarine
water
1-1/2 Tbsp flour
dill
parsley
1/2 cup milk or water
Melt margarine in saucepan
Add carrots and onions and cook until soft
Add potatoes in layers
Layer tomatoes over potatoes
Season with salt and pepper
Add enough water to come underneath top
layer
Boil slowly for 20 minutes
Mix flour and water or milk for thickener
Add to stew
Lay fish fillets on top of stew and cook
for 10 to 20 minutes – this steams fish
Sprinkle dill & parsley over top
Serve with rice or noodles
