Crab Broccoli Casserole

12 slices bread

2 1/2 cups milk

1 cup mayonnaise

7 hard-cooked eggs, finely chopped

1 lb fresh crabmeat

1/4 cup chopped onion

1 tbs plus 1 tsp chopped fresh parsley

2 pkg (10 oz each) frozen broccoli

1 cup shredded sharp Cheddar cheese

Remove crust from bread. Cut bread into 1/2″ cubes.

Combine bread cubes, milk, and mayonnaise; stir well. Cover and refrigerate 30 minutes.

Stir in eggs, crabmeat, onion, and parsley.

Cook broccoli according to package directions; drain well.

Arrange broccoli in a lightly greased 13 x 9 x 2″ baking dish. Spoon crabmeat mixture over broccoli.

Bake, uncovered, at 325°F. for 40 minutes. Sprinkle with cheese and bake an additional 5 minutes or until cheese melts.

Serves 5.
