Thanks Jodee! These roasted veggies are so good. I think the roasting intensifies their flavors…. so good.
I am kind of disappointed. My sauce didn’t come out near as saucy as yours looks. I roasted the veggies for an extra ten minutes and still never really got the color or roasted flavor that I like. It is very good, but I know I must have done something wrong.
Also, on another note, my kids bought me one of those chop to pots. It is handy in a pinch, but I really don’t like how it won’t lie flat to chop stuff.

Hi Delisa, it may of just been your tomatoes. Some are better than others for sauces. If the eggplant had started to collapse it is time to take it out or the vegetables can get mushy. If it tasted good I would try a different tomato next time. My chop to pot lies pretty flat. Thanks for your feedback!
