1 1/2 lbs. new red potatoes
4 ozs. pearl onions or 1 or 2 medium onions quartered
4 ears sweet corn
1 lb. Kielbasa (or sausage of your choice)
2 lbs. large unpeeled shrimp
1/4 cup Old Bay seasoning and any spicy shrimp boil, (or Tabasco) to taste
Lots, and lots of newspapers
In a very large stockpot, bring 5 quarts of water, spices, potatoes and onions to a boil, and boil about 10 minutes. Add sausage boil for 5 minutes, add corn and boil for 2 or 3 minutes, add shrimp and boil for another 3 to 4 minutes or until shrimp turn pink.
Drain entire pot thoroughly by pouring through a very large sieve, let drain a minutes or so, then dump all the food on the middle of a heavily layered newspaper-covered table top. Give each person a sheet of wax paper for a “plate”, and small disposable containers of melted butter and cocktail sauce.
