Shrimp Scampi in Butter Sauce
Sauce:
1 cup butter
8 ounces clam juice
1 tablespoon minced parsley
1/4 cup lemon juice
1/2 cup half and half
1 tablespoon minced garlic
1/4 cup flour
1/3 cup white wine
1 teaspoon dry basil
Scampi:
2 tablespoons butter
1 tablespoon minced garlic
1 teaspoon dry parsley
1 teaspoon dry basil
1/3 cup olive oil
1/4 cup lemon juice
1/4 cup white wine
3 pounds cleaned prawns
Sauce: Melt butter with garlic in small saucepan over medium-heat.
In bowl, mix clam juice, flour and parsley until smooth. Pour into butter, stir until blended. Add wine, juice and seasonings, stirring constantly. Slowly add cream and stir until thick. Simmer for 1/2 hour.
Scampi: Melt butter on high, and add oil. Add rest of ingredients.
Add prawns and saute until firm and pink. Pour one cup of sauce over scampi.
