How to Make a Bread Machine Mix

A supply of quart-size, self-sealing bags and you are ready to start making mixes.

Some stick-on notes or labels or adhesive labels to write instructions on.

Note: Once the mixes are prepared you’ll need to store them in a cool, dry, dark place.

Old-Fashioned Central Pennsylvania Potato White Bread Mix

Measure into the quart bag:
2 C. bread flour or all-purpose flour*
2 T. dried milk solids
2 T. instant potato flakes
1/4 t. ground nutmeg
1/4 t. ground turmeric (optional)**
1 T. gluten*
1 1/2 t. salt
1 T. sugar

Stir all of this with spoon or spatula. Or just shake it around to mix. Then add another:
1 C white flour

*If you are using bread flour, omit the gluten.

**In central Pennsylvania, this is often used to color the bread and leave a hint of the turmeric flavor.

Write the following on the label: “Put into the bread pan of the bread machine 1 C. water, 1 T. shortening (lard, butter, margarine, oil), then the bread mix; add 1 1/2 t. yeast and start.” Note: If you have some, potato water would go nicely in this, instead of water.
