Raisin Bread

How to Make a Bread Machine Mix

A supply of quart-size, self-sealing bags and you are ready to start making mixes.

Some stick-on notes or labels or adhesive labels to write instructions on.

Note: Once the mixes are prepared you’ll need to store them in a cool, dry, dark place.

Measure into the quart bag:
1 C. bread flour or all-purpose flour*
1 C. whole wheat flour
1 T. dried milk solids
1 T. gluten*
1 1/2 t. salt
1 t. ground cinnamon
1/2 t. each ginger and mace (or nutmeg)
2 T. brown sugar**

*If you use bread flour, omit the gluten.

**Or leave out the brown sugar and note that you must add 2 T. honey on the label.

Stir all of this with spoon or spatula. Or just shake it around to mix. Then add another:
1 C. white flour

In a separate small bag or plastic wrap, wrap tightly: 1/3 C. raisins and 1/3 C. nuts (pecans, almonds or peanuts).

Write the following on the label: “Put into the bread pan of the bread machine 1 C. apple cider or orange juice (or 1/2 C. water and 1/2 C. milk), 1 1/2 T. shortening (lard, butter, margarine, oil). Then the mix, add 2 t. yeast and start. Near the last 5 minutes of the last kneading, or 15 to 20 minutes into the cycle (if you haven’t a guide book or can’t figure out when the last 5 minutes are), drop in 1/3 C. raisins and 1/3 C. nuts.”
