Cran-Apple Muffins
2 C. coarsely grated apple
1 C. coarsely grated carrot
1 C. cranberries
1 1/3 C. sugar
2 eggs
1/2 C. vegetable oil
2 1/2 C. all-purpose flour
1 T. baking powder
2 t. baking soda
1/4 to 1/2 t. salt
2 t. cinnamon
Muffin papers
Preheat oven to 375° F. Line a 12-cup muffin tin with muffin papers.
In a large mixing bowl, combine apples and carrots; mix with cranberries, sugar, egg and oil. Mix flour, baking powder, soda, salt and cinnamon in a separate bowl and add to fruit mix. Mix to moisten and fill muffin tins 2/3 full. Bake 20-25 minutes. When muffins are cool, store in a resealable plastic bag.
Makes 12 large muffins.
