Who doesn’t love chocolate chips? Bite size Mini Chocolate Chip Cookies are the way to go, 3 bites and they are gone. Kids will love it because they can have one for each hand. Mini chocolate chips are perfect in these cookies. I used a small scoop to make these or a large tablespoon of the dough will work too. When baked these cookies are about 1 1/2 inches across in diameter.

We have Ruth Wakefield to thank for chocolate chip cookies. She invented them in the 1930’s. She owned an Inn with her husband called the Toll House Inn. She was baking some chocolate cookies for her guests when she discovered she was out of baker’s chocolate. She chopped up some semi-sweet chocolate instead thinking they would melt, instead the chocolate chip cookie was born. The recipe was soon printed in a Boston newspaper and Nestle’s saw it’s chocolate sales increase. Nestle’s then made a deal with Ruth Wakefield that she would get a lifetime supply of chocolate and they would print the cookie recipe on their package. When Nestle’s first started marketing the chocolate chip cookies they packaged a chopper to go with the chocolate. It was around 1939 when Nestle’s started selling what we know as chocolate chips. If anyone still has one of these choppers I would love to see a picture of one.

Mini Chocolate Chip Cookies

Total Time: 30 minutes

Yield: 6 dozen

Mini Chocolate Chip Cookies are full of mini chocolate chips - grab a handful! delicious bite size cookies.

Ingredients

  • 3 1/8 cups flour
  • 1 tablespoon cornstarch
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter - at room temperature
  • 1 cup packed light-brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 1/3 cup mini semi-sweet chocolate chips

Instructions

  1. Preheat oven to 326 degrees.
  2. Add the butter and sugars to a mixing bowl fitted with the paddle attachment. Beat for about 3 minutes until light and fluffy. Add eggs one a time and mix until thoroughly combined. Add vanilla.
  3. Combine flour, cornstarch, salt and baking soda together. Add to butter mixture. Mix until combined. Add chocolate chips.
  4. Using a small scoop or a tablespoon drop dough onto a greased baking sheet. Bake for about 10 minutes. Cookies will be brown on the bottom. Cool on a wire rack.
