Weight Watcher Cucumber Salsa
1 cup cucumber – diced
1 tablespoon fresh orange juice
1/2 cup orange sections – chopped
1/4 cup red onion
2 tablespoons jalapeno peppers – finely chopped
1 tablespoon white wine vinegar
2 teaspoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
Combine all ingredients in a bowl; stir well. Serve chilled or at room temperature.
Makes 2 cups
