Orange-Glazed Roasted Shrimp

1 pound shrimp, large, peeled and deveined

3 medium shallots, coarsely chopped

1 medium orange pepper, or yellow pepper, coarsely chopped

1/2 cups orange juice

2 tbsp fresh lemon juice

2 tbsp honey

1 tbsp thyme, fresh, chopped

1 tsp fennel seed

1/8 tsp table salt, or to taste

1/8 tsp black pepper, or to taste

Preheat oven to 450° F.

Scatter shrimp, shallots and bell pepper over bottom of a 9 X 13-inch glass baking dish.

In a small saucepan, stir together orange juice, lemon juice, honey, thyme and fennel seeds; bring to a simmer and cook for 2 minutes.

Pour orange glaze over shrimp mixture; toss to coat and spread into a single layer and season to taste.

Roast for 8 minutes. Serve hot.

Yields about 3/4 cup per serving.
