Tequila Chicken

2 1/2 pounds chicken thighs without skin, or skinless chicken pieces
1/4 cup tequila
2 Tablespoons lime juice
1 Tablespoon olive oil, or vegetable oil
1 Tablespoon minced cilantro, or parsley
1/2 teaspoon salt
1/4 teaspoon black pepper

Rinse chicken and pat dry. Prick all over with a fork. In medium bowl, combine tequila, lime juice, oil, cilantro, salt, and pepper. Add chicken. Turn to coat.

Marinate at room temperature, turning several times, 30 to 60 minutes.

Prepare hot fire in a grill or preheat broiler. Set chicken about 6 inches from heat and grill or broil, turning occasionally, until cooked through with no trace of pink near bone (about 25 minutes).

4 servings.

Diabetic exchanges per serving: 4 1/2 lean meat, 1/2 fat. Also 257 calories, 10 g fat (2 g sat fat), 134 mg cholesterol, 1 g carbohydrate, trace fiber, 32 g protein, 486 mg sodium, 385 mg potassium.
